so what type of equipment would i be looking for if i wanted a server capable of supporting say...100 players, with full world spawns?

The golden rule? You can never have enough server hardware ^^

Hard to be precise in estimating what's needed...
But I'd focus on plenty of (fast) memory, a harddrive-setup that gives you high write-speeds (for those pesky world-saves) and as good an internet-connection as you can get.
